Our pizza dough
We have pizza dough for sale on our website and on the Kendal Hills Virtual Farmers Market. I thought it might be easier for me to explain how to use this dough with some explanations here and on our video. Our dough is not the usual super-market dough – not that super-market dough isn’t good – but this dough (which is better!) is more hydrated, has more moisture than most doughs which is what gives it a thin and crispy crust. Delicious.
When you get the dough you can either freeze it or refrigerate it for use in the next few days. Either way, let the dough come to room temperature. (I leave it in the bag just so I don’t have to wash out the bowl after it’s ready to use…) Also – I want to point out that the plastic tags we put on the bags are recycled from previous uses. Once the dough is at room temperature, you will see some bubbles on the dough. That’s good and means it is fluffy and ready to bake.
Make your own pizza
Preheat the oven to 425. If you have a ceramic baking sheet, that is what I use but a normal baking sheet will do. You can put a piece of parchment on the sheet if you wish. Take a dash of flour and sprinkle on the baking sheet spreading it over the surface. Then literally “dump” the dough on the sheet resting in the centre. Quickly with your hands, pull the dough toward the edges so the dough is evenly distributed. It should be about 10″ wide. No need to use a roller, in fact I discourage it as the dough will stick. The dough is easily manipulated with your hands into the shape you want.
Pizza toppings
There are so many types of toppings, so please use whatever you wish. In this recipe I use:
1 clove crushed and chopped finely
1 leaf kale sliced thinely
1/2 cup tomato sauce (or pesto)
1/4 cup cheese – mozzarella or other cheese you have on hand
1/4 cup soft goat cheese
salt
1 tsp dried oregano
Spread the sauce, sprinkle with the garlic, the cheeses, the kale and spices. Bake for about 15-20 minutes. The pizza is done when it’s crisp (you can tap your fingers on the edge and it sounds hollow, lightly brown on the edges.
